Originally conceived by Michelin-starred Chef Akrame Benallal, the restaurant continues to evolve under his guidance into a tribute to Morocco’s rich culinary heritage, rooted in tradition, terroir and spirit of sharing. A native of the historic Kasbah and part of the Mandarin Oriental family since the resort’s opening, Chef Hind draws inspiration from her Berber heritage and her childhood in the medina. Among her signature dishes, the Tangia Marrakchia, emblematic of Marrakech, and her delicate Pigeon Pastilla reflect her way of sharing the Morocco she knows best : one of generosity, seasonality and stories passed from one generation to the next.
